VMI gives you a solid start to the year with its new AF 300 fermenter, designed to mix, ferment, mature and preserve your sourdough and poolish.
The AF300 has a 300 litre bowl that will allow you to produce up to 200 kg of liquid to semi-pasty sourdough.

The AF 300 makes it quick and easy to produce soft, creamy, high quality sourdough.
- A smooth and homogeneous mixture: its high performance tool and scraping system guarantee an optimal development of the gluten network, without shearing
- Its design has been thought out to optimize the comfort of the workstation: mobile machine on wheels with an adapted bowl height to facilitate daily work. It has a two-part see-through cover that allows you to keep an eye on the mixture.
- The fermenter is easy to use thanks to the Digy touch interface and its 3 pre-set sourdough recipes. It also offers automatic calculation tool for ingredient quantities.
A fermenter that combines hygiene and sustainability
The AF 300 has been designed to ensure easy operations including draining, cleaning, and maintenance.
- Robust machine with all stainless steel parts and optimized design to prevent cross-contamination.
- It is equipped with a drain valve which is flush-mounted on the product side to ensure full passage of the sourdough.
- The fermenter offers optimal hygiene with tools, scrapers and cover easily removable without tools.
- To limit energy consumption to the bare minimum, the AF 300 is equipped with a heating and cooling unit adapted to the required performance. This allows to reach quickly target temperatures without over-consumption or waste of energy.
